Morning Routine Change Up

Every so often I find it necessary to tweak my eating routine…as the seasons change, or my body changes. Both seem to be the case at the moment.
For months I have started my day off with two eggs and some fruit…usually berries, or a Cinch protein shake. Both of which are totally acceptable breakfast options. But…
I found this recipe for Vegan Overnight Oats on Pinterest, and had to try it. I’ll be honest, I was a little weirded out by it at first…but I am so glad I talked myself into trying it.

Vegan Overnight Oats (original recipe from Oh She Glows)
1/3 cup organic rolled oats
1 ripe banana, mashed
3/4 cup almond milk
1 tablespoon chia seeds
1/4 teaspoon vanilla
2 teaspoons real maple syrup

Added:
1 tablespoon organic, unsweetened peanut butter

Mix everything but the peanut butter in a bowl. Cover and refrigerate overnight. Add peanut butter, and stir before eating. 

EAT COLD! Do NOT cook!

This stuff is A-MA-ZING! It keeps me full for a good 4-5 hours…and is easy on the tummy first thing in the morning.
I will definitely be experimenting with switching up my add ins soon! Strawberries, blueberries and peaches all sound delicious! Maybe some sliced almonds and raspberries…
My mouth is seriously watering.

Also…I have decided to ease up on the dairy. In the past I have been resistant to this…because I have a special kind of love for milk and cheese…but my skin is broken out into horrible patches of eczema and other rashy-ness…so bye-bye beloved moo juice. At least until I am certain it is not causing any of my issues. I am still trying to find my perfect balance.
So…
I had to find a substitute for my beloved heavy cream, which was so very marvelous in my organic coffee every morning. It gets me through the twelve mile ride to school…and the traffic!
I tried almond milk…blech! Soy milk…NAS-TAY!  They were neither smooth, nor creamy.
Then I got a brilliant idea…

Organic coconut milk! And not the lowfat, in a carton, tastes like milk of magnesia stuff…the REAL in-a-can-full-of-creamy-goodness coconut milk!

Let me tell you…

I will NEVER go back. This is heaven in a polka-dot cup…

It does need to be transferred from the can to a container (I used a mason jar…shocking!), and stored in the fridge. Also, it thickens when cooled, so it is necessary to give it a little shake.
I added 3 tablespoons to my coffee, and find it to be comparable in creaminess to 2 tablespoons of heavy dairy cream. But MUCH yummier!
It also saves me 20 calories and 2 grams of fat!
