I have been seeing chocolate pudding recipes all over the web lately…
and they have an interesting ingredient…
AVOCADOS!
It took me a while to work up the nerve, but I finally made some.
And it is incredible!
I have read several recipes, but decided to put together my own from the ingredients and measurements that suited our tastes.
Decadent Chocolate Pudding
2 ripe organic avocados
1/4 cup 100% cocoa powder (unsweetened)
3 Tbsp raw honey
1 Tbsp organic virgin coconut oil
3 Tbs unsweetened organic almond milk
1 tsp vanilla
Scoop the avocados into a food processor. You will want one that works well, or you will not get the creamiest consistency.
Add the rest of the ingredients to the processor.
Process for 30 seconds. Scrape down your bowl…
and process an additional 30 seconds, or whatever amount of time it takes to get the consistency you like. If the pudding is to thick or lumpy, add a little more almond milk or coconut oil.
Scoop into a bowl, cover and refrigerate for at least an hour. I noticed that the longer you refrigerate, the better.
I am so glad I decided to give this a try. It is delicious, nutritious, and you totally will NOT know the main ingredient is AVOCADO.
