Earlier this week, Lily found a popsicle mold at the supermarket and asked if we could make our own popsicles. AWESOME idea!
I decided to use what we already had in the house and make my own recipe.
Tropical Fruit Pops
1 1/2 cups fresh pineapple, chopped
1 ripe banana, peeled and cut into pieces
1/2 cup orange juice
1/4 cup pineapple juice (mine was reserved from my pineapple)
1/4 – 1/2 cup organic shredded coconut
First, I have to tell you, I HATE cutting pineapple! At least I did…
until I got this baby!

You simply line the core up with the little teeth…
twist…
and twist…
pull…
chop it up, and it’s done!
(I reserved the juice that was in the bottom of the pineapple shell (or whatever it’s called…haha!).
Add the everything into a food processor or blender.
Lily was a great helper. It is great to include kids in food prep…it teaches them how to do more than open the cupboard and pull out a pack of fruit snacks or cookies. Plus, kids LOVE to eat what they make themselves.
Process for 30 seconds…or more, depending on how chunky you want these.
Scoop into a spouted measuring glass.
Pour mixture into the mold. Mine would have made 5…but I only had room for 4…so I ate the rest with some vanilla yogurt…YUM!
Add your handles.
Pop them in the freezer for at least 6 hours.
And you have a healthy, yummy tropical treat!
